Happy Memorial Day

Memorial Day is a great day to get the family together around the grill!  I've put together a patriotic menu that is fun in the sun including a Grilled Achiote Chicken with a cool watermelon and berry salsa, Grilled Chili & corn in Anaheim peppers, Uncle Sam Vegetable platter, Red, white and blue chocolate strawberries, Patriotic cake pops and Fruit tarts
It's a patriotic menu sure to set the tone for a outdoor Memorial Day party!

Achiote Grilled Chicken with a Cool Watermelon and Berry Salsa

It's Memorial Day so Go Big!  I take a whole fryer chicken and split it in two and marinate it in a achiote spice and orange juice mixture and then grill it to perfection.  The result is a juicy spicy citrus chicken that is perfectly complimented with a cool watermelon and berry salsa.  This will be a huge hit at your memorial day gathering.

Green Chili & Corn stuffed Anaheim Grilled Chilies

I took a favorite family recipe of Green Chili Corn Casserole and stuffed a pepper with it and put it on the grill-the result was ...a new family favorite.  I think this might make your family favorite list too!

Red,White and Blue Cake pop Centerpiece
This is a great dessert option AND a great centerpiece and focal point for your party spread!  I use red, white and blue gum balls in a mason jar to anchor cake pops dipped and decorated in all the patriotic colors.  Click here to learn how to make these cake pops

This dessert is a great portable treat and utilizes push pop cylinders.  The cylinders are reusable and can be purchased at a baking supply store- mine came from one of my favorite stores ABC baking supply in Phoenix AZ.  These pops are made by layering three cakes in the cylinder tube. Click here for the recipe.
